Fruit Cake Ingredients

5 egg whites, 2 cups sugar
½ cup butter, 1 cup sweet milk
3 cups flour
2 teaspoons baking powder
2 cups raisins and chopped citron

Beat butter and sugar to a cream then add flour sifted with powder and milk. Mix into a smooth batter; then add whites beaten to a stiff froth. Bake in 3 layer pans and put all the fruit in center layer. Assemble the 3 layers with white icing between layers and ice the sides and top.

White Fruit Cake Recipe Ingredients

1 cup butter
2 cups sugar, 3 cups flour
1-1/2 teaspoons baking powder
1 cup milk
1/2 lb white raisins, 1 cup almonds
1 cup candied cherries
4 slices candied pineapple,red & green
2 cups coconut, ground
5 egg whites, beaten stiff, folded in last

Mix the white fruit cake recipe as follows: Cream butter and flour until very light; then add other ingredients, except egg whites and sugar, and mix into the butter with the flour. Finally beat the egg whites and add sugar by degrees, making a meringue, then fold into the butter with the flour. This recipe can be backed in paper lined muffin pan and baked 1 hour or more at 300 degrees.
