Lemon Cake with Lemon Filling
Two cups sugar, 1/2 cup butter, 3/4cup sweet milk, whites of 6 eggs, 3 cups flour, 2 teaspoons baking powder.
Grated rind and juice of one lemon, yolks of two eggs, 1/4 cup butter, one cup sugar. Cook till thick, and spread between the layers.
Lemon Drop Cake
1 cup sugar
2 tablespoons butter
3 eggs (keep 2 whites for the frosting)
1/2 cup milk
1-1/2 cups flour
1-1/2 teaspoons baking powder
Grated rind of a lemon
Bake in muffin pan. This will make twenty cakes. For lemon frosting, beat the egg whites to a froth and add powdered sugar until stiff enough to spread. Flavor with extract of lemon.
Lemon Cake with Lemon Jelly
1-1/2 cups sugar, 1 cup butter, 2-1/2 cups flour, 5 eggs, 4 teaspoons sweet milk, 1 teaspoonful cream tartar, 1/2 teaspoon soda.
One cup sugar, two tablespoons of butter, two eggs, juice of two lemons. Mix all together and boil. Spread between lemon cake layers.
