Gluten Free Chocolate Cake

Black Chocolate Layer Cake
Gluten Free - Sugar Free

1/3 cup butter
1-1/2 cups maple sugar
4 tbsp melted unsweetened chocolate
1/2 cup boiling water
1 cup flour (1/3 potato, 1/3 rice, 1/3 rye)
sifted together twice
1 egg
1/2 teaspoon salt
1/4 cup buttermilk
1/2 teaspoon baking soda

 

This chocolate layer cake is gluten free and one of our favorite white sugar free recipes. Mix the melted chocolate, sugar and butter, and beat for ten minutes, until thoroughly creamed and fluffy. Add the boiling water, the well-beaten egg, and then the sifted flours. Mix thoroughly. Add the soda and salt to the buttermilk, and mix into the cake batch. This will make a thin batter. Bake in a deep cake pan, well-greased at 350 degrees for about thirty minutes. Spread Sugar Free Chocolate Icing between layers and on top and sides of cake.
